Serve 4

  • 500g Mancini Fettuccine
  • 20g Butter
  • 1 clove garlic, crushed
  • 300ml cream
  • ½ cup freshly grated parmesan cheese
  • Salt & freshly ground black pepper
  • freshly grated parmesan cheese, to serve
  • parsley to garnish

Melt butter in the saucepan.  Add the garlic and cook over medium heat until garlic begins to turn pale gold.

Add cream and grated Cheese. Increase the heat to medium high and bring to a boil, stirring frequently to keep the sauce smooth.

When sauce reaches to a boil, turn the heat down to a simmer and cook for another two to three minutes.  Your sauce should be smooth and creamy and fully cooked at this point. Season with salt & pepper to taste.

Cook pasta in large pot of lightly salted boiling water for 3 -4 minutes or until tender but still firm to the bite. Drain the pasta.

Combine sauce with cooked pasta in a separate bowl and toss until all the pasta is coated.

Serve onto warmed plates, sprinkle dish with grated cheese, garnish with parsley and serve immediately
